Ingredients
• Plain flour 175g (6oz)
• Icing sugar 25g (1oz), plus extra for sifting
• Butter 90g (31/2oz)
• Eggs 5 large
• Lemons 2, finely pared rind and juice
• Caster sugar 110g (4oz)
• Dessert apples 4, cored, peeled and cut into rings
• Single cream 150ml (5fl oz)
• Milk 150ml (5fl oz)
• Ground cinnamon 1 tsp

Method
1. Sift flour, pinch of salt and icing sugar into a bowl. Rub in butter, add 2 egg yolks and mix to a dough. Roll out pastry, line a 25cm (10in) fluted flan tin, trim and chill. Preheat oven to 220ºC/425ºF/Gas 7.
2. Pour lemon juice into a wide pan, add 75g (3oz) caster sugar and 600ml (1 pint) water and bring to boil. Add apple and cook gently until just softened. Drain.
3. Whisk remaining ingredients. Place flan on baking tray, and arrange apple rings. Pour in custard and bake for 15 minutes. Reduce oven temperature to 180ºC/350ºF/ Gas 4 and cook for 20 minutes, or until custard is set and browned. Serve sifted with icing sugar.
