Turkey Croquettes

 

Ingredients

Turkey Croquettes• Butter 25g (1oz)
• Onion 1, peeled and finely chopped
• Cooked turkey meat 175g (6oz), finely chopped
• Pork sausagemeat 275g (10oz)
• Mixed dried herbs 1 tsp
• Chopped parsley 2 tbsp
• Chives or basil 3–4 tbsp, snipped or finely shredded
• Eggs 2 large, 1 beaten
• Plain flour 2 tbsp
• Fresh white breadcrumbs 110g (4oz)
• Corn oil for frying

Method

1. Melt butter in a frying pan, add onion and cook until softened. Transfer to a mixing bowl and cool. Mix in turkey, sausagemeat, herbs and 1 egg, transfer onto floured board and divide in two. Shape each piece into a smooth roll, approximately 30cm (12in) long.

2. Cut each roll equally into four and coat lightly with the flour and then with the beaten egg and breadcrumbs. Roll and shape each piece until smooth.

3. Fry the croquettes in a little oil until golden and cooked through, turning frequently. Drain well on kitchen paper. Serve with cranberry sauce and a crisp green salad.
