Time 1 hour
78 calories per pancake with blueberries
Fresh blueberries 300g (11oz), stalks removed
Caster Sugar 110g (4 oz)
Plain Flour 110g/ 4oz
Baking powder ½ level tsp
Eggs 2 large, beaten
Butter 50g (2oz), melted and cooled
Buttermilk 284ml tub
Icing sugar for sifting
Method:
- Place blueberries in a stainless steel or enamel saucepan, add 90g (31/2oz) sugar. Cover and heat gently, stirring occasionally, until juices flow and berries are softened. Remove from heat. Keep warm.
- Sift remaining sugar, flour, baking powder, and pinch of salt into a bowl. Pour eggs into a well in the centre, gradually whisking into flour, slowly adding butter and buttermilk.
- Heat and lightly grease a heavy-based frying pan with butter. Drop tablespoonfuls of mixture into pan and cook for 2 minutes until mixture forms bubbles, appears dry on surface, and is lightly browned underneath.
- Turn pancakes over and cook other side for 1-2 minutes. Transfer from pan. Keep warm.
- Serve with blueberries, dust with icing sugar.
